My Latest Lab Tests (on the Paleo Diet)

How great to see your progress into the Paleo Diet. If you are eating what Polly eats you can't be to far off. When I joined this group I was grain free and basically eating a diet made up of lots of fruits and vegetables, a few nuts and moderate amounts of meat. From going from learning that I needed to be gluten free from Dr. Fine’s tests to a grain free, dairy free, soy free, processed food free diet in the year before coming here was a great adventure. The Paleo diet was not much more than a few tweaks away . Along with Polly my change of diet never had anything to do with will power. After deciding that diet was the key there was never any going back. I simply can not eat those foods any longer without dire results. I eat vegetables breakfast lunch and dinner so as compared to the past eat a lot more vegetables. I eat meat with every meal but in only medium amounts. I would guess in that I fill up on lots of vegetables that I eat less meat than I did before MC.
Along with Polly I feel that getting as many Omega 3 oils is very important and have had gratifying results. The only supplement I take is fish oil in summer and cod liver oil in the winter. It has helped enormously with a dry skin problem I have had problems with ever since moving to Denver. I get lots of sunlight in the summer months but this time of year as work picks up and I am inside more than outside under florescent lights the additional Vitamin A and D form the cod liver oil is a great help. Once I turn on the furnace it is drier here yet so lots of attention to skin care goes along with the supplements. Additional omega 3 has made a great difference .
Lean Natural Pork is a regular part of my diet. In that it is so lean I have had to learn how too cook it so that it is not dried out. I usually cook it with lots of vegetables but I am open to anything that works

Thanks for the word processing tip; I'll do that. Right after I send this I'll type the recipe into the recipe file. The original calls for flour, I substitute a little cornstarch, only because I don't have arrowroot right now. Tapioca also would work for a thickener, I guess. I really hope you try it, it's foolproof and I think really good - my new favorite recipe when I think I can't eat another mouthful of meat. (Since I eat so much of it, it gets old, you know what I mean?)
I don't eat eggs, or dairy, or beans + grain, so it's just meat, meat, meat for protein.
