This is getting very funny! By the way Dee, I'll offer to help you in the kitchen but I'm thinking in addition to gf and df it should be pf and af ('possum free and armadillo free)

Thanks for the offer on sending the groundhog, but we have aplenty hear in Ohio!!

We may have to find another source of protein. Becky's suggestion to go 'possum-free, and armadillo-free, may be a good idea - there aren't enough of them around here to keep this bunch fed for very long, anyway. :lol:

Also, ever since the coyotes moved in here, about 40 years ago, the jackrabbit population has been in a steady decline. We don't have any ground hogs down here in Texas, either, and it sounds like shipping them in may be a problem, especially in the summer. LOL. I read somewhere, though, that they're not totally intolerable as table fare, if you don't try to cook one that's too old and tough. Anybody ever try cooking one?

You all are toooooo funny!! I'll come if I can bring DH, Tucker (our corgi) and our kitties P.T. and Cruiser.....I will keep us supplied with fresh Oregon steelhead and trout...also oregon strawberries (extremely sweet) and Triple Crown Blackberries!!! Have to transplant some pine trees and azaleas and rhodies too and some cool weather from big ole rainclouds! I'm a little nervous about that armadillo, tho...is it baked, fried, or smoked?

Tex I would be willing to cook the rabbits, armadillo, squirrel what ever you bring home that is wild. That is my specialty, you would have to build an herbal shop for me tho. and a place to grow the herbs so I know where they came from. And I would offer a small garden for the critters that naturally eat it. SOOOOOO when do we start?

Wait a minute, Becky - nitrates are good for us. Remember the news article I posted about a month or so about that "discovery"? Nitrates are supposed to be as healthy as "all getout", now. LOL.

Sunny, I like your plans, and we could definitely use some cooler weather, and some rain clouds. To be honest, armadillos make me a little nervous, too - at least the thought of "processing" them does, since they are known to carry leprosy, though they don't display any symptoms. :yikes:

That settles it. I don't want to get leprosy from and armadillo so it's ham with the nitrates. Dee do you have a df scallop potatoe recipe? Even though this is all in jest, wouldn't it be a hoot! I wonder how many outhouses we would really need and what it would be like to only have 1. Might get ugly. I hope you all have a marvelous weekend, be thankful you don't have to share an outhouse!

Actually, rattlesnake is pretty good, especially deep fried. You have to watch out for the small bones, though. I've never tried armadillo, but I've heard that it tastes "just like chicken". LOL.

I was curious and YES there are armadillo recipes for Dee:

Bar-B-Q'd Armadillo
Thanks to Jason Hunter for sending this recipe.

~ 1 armadillo
~ bacon grease
~ 1 cup butter
~ 1/2 cup ketchup
~ 1/2 cup grated onion
~ 2 tbsp mustard
~ tabasco to taste
OR
use your favorite BBQ sauce


In a sauce pan, combine the butter, ketchup, onion, mustard and tabasco. Heat over low heat until the butter is melted. Stir occasionally.

Rub bacon grease into the armadillo.

Grill over a hot fire for 5 minutes.

Reduce the fire by half.

Baste the meat with the sauce until done. Armadillo is cooked like pork.

Serve and Enjoy!

Don't worry about the proteins....we will just bring our little herd of Irish Dexter cattle and a new set of hogs, before long, we will have the freezers filled with organic protein...but we will have to have my butcher move down there with us....He just processed a 400 lb sow for me and made a special batch of extra hot sausage with no corn sugar...just as I requested...

Besides, a good butcher on site would make processing the wild boar my Catahoua could hunt down much easier.... :lol:

:lol: Wow!! I missed a lot while I was painting walls and shampooing carpets!!

Have to comment on the groundhog......... I've never personally tasted one, possibly because I was told once that you are supposed to cook them on a plank and when it is done.... throw it away and eat the plank. :lol:

The Dexter cattle and hogs are sounding mighty good!!!!
