I feel that I am pretty much on the right track with the Paleo Diet and am indeed making some exceptions. Not a lot but some. I am keeping the ingredients as basic as possible if I do fudge. I actually do think that I am seeing some improvement but am not sure if that is due to the Entocort or the diet or both. I am pleased however with my improvement. Although the consistancy of my stool is not like it should be (borderline D) I am going less often and the urgency is not a great.

Now that I know what kinda of chocolate to look for I have one other item that I need to replace.....butter!!! I miss it terribly too....almost as much as chocolate. I have done some looking and I know that Whole Foods used to carry rice butter but they don't any longer. I have spoken with the dairy manager and they are going to look into it again. I have done some searching on the forum in the diet section and read about Ghee. I see that it is made from butter so is it safe or if it is why??? What do others use for butter substitutes??? Other than the new butter question I think that I am doing ok. I am still getting used to my new woe and know that I am healthier for it. That is always a plus.

Thanks again for all of the help. This new family has been a lifesaver!

On a side note. I have to share some good news. I just found out that my son is coming home for R&R on or around November 15th! It will be so good to see him again. Even though he has not been gone that long (June 26th) I an anxious to just see him and give him a hug and know he is safe even if it is just for a little while. It will be hard to let him go again. But the next time he comes home...it will be for good.

While the enjoy life chocolate doesnt have any of your offenders, it still made me feel sick when I ate them at first. Basically what I would do, if I could do it over again, would be to not eat chocolate and a lot of sugars for the first few months on the diet. That way I think I could have healed better. But really it took me almost 3/4 of a year to feel about 75% better. Then after 2 years I could feel a HUGE difference... and I mean HUGE.

What I stuck to at first was mainly: chicken, turkey, lean ground beef, ground turkey, all fish, and very very little pork, mashed potoato, lots and lots of rice, hemp milk, diluted gatorade, well cooked green beans and well cooked winter squash. I would also make some banana rice muffins. Then about 1 month into the diet I started to add chocolate and sodas and that was a big mistake!

You might want to try and just cut out gluten, all dairy, soy, nuts and eggs for a little while. Then slowly introduce a soy product that you know for sure is GF and DF and see how that goes. But add it in small doses each time. If that goes well you can try the eggs. I still dont do great with nuts but much better than before. Anyways just my opinion which is just as good as anyone else's. The trick is finding out what works for you!! Good luck and you have great support here.

Hi geargirl,

I've been eating very close to paleo for for about three years now, not 100%, 100% of the time but pretty strict. It's been a stable diet to keep my CC symptoms under control.

You may be interested in taking a look at a Paleo forum I follow that has fascinating conversations about this way of eating and lifestyle...the best I found, so far on the net. Take note of the top 2 sticky topics for menus and such.

If you have any questions for those members on the paleo diet, you might try a post in that forum, and if they happen to peek out of their caves, they might notice it and respond. Sometimes it takes a while to get a response, though, if they're out foraging for paleo food. LOL.
Tex, your funny....yes it's been a long hot summer of foraging and now it's hunting season to boot. Seems never ending for us cave dwellers. LOL

Guess I have been sort of hibernating for quite some time. Glad I crawled out of the cave to check in. Lots of new members!

I'm back from visiting my daughter and am trying to catch up on the posts.

First of all, Geargirl, enjoy the visit with your son!

You might be interested in my experience with using Ghee. I, too, really love butter and miss eating it. It makes it even more difficult when you're soy intolerant because all margarines also become off-limits. My Fecal anti-casein (cow’s milk) IgA antibody number was 130 Units, which logically would imply that I'm highly intolerant to casien. Now that I'm in remission, however, I'm finding that I can tolerate small amounts of cheese. I'm tempted to see if I can tolerate butter, which should have only a small amount of casien.

I've never had a problem eating ghee. I sometimes removed it from my acceptable list while I was still figuring out my intolerances, but have since added it back to my diet. Ghee is made from butter, so it's derived from dairy, but the real problem is the casien. Ghee is made by removing all the casien and water. If any casien were left in it, it would quickly spoil at room temperature. One of the nice things about ghee is that it can stay at room temperature for several months. I have used it in combination with Spectra shortening in baked goods. I also use it on vegetables and in sauces. I'm going to try using it to make fudge. It's a fine substitute for butter, but I've noticed a slight texture change with the casien removed.

Since ghee is expensive, I'm going to try making my own sometime this week.

I suggest that you eliminate it while you're having issues, but once you get them resolved, you could try adding ghee to your diet.
