It's possible to find coconut milk without guar gum or other additives, depending on what your stores carry.
Also, it is possible to be intolerant to coconut. I used to love coconut pudding and ice cream, but for some reason it began bothering me.

I couldn't wait until tomorrow to try the SO chocolate ice cream. A few hours after I ate about 1/2 cup I was quickly reminded what happened the last time I ate it. I have so much gas, I could fuel the Goodyear blimp. Good grief, unbelievable!! Before I was diagnosed I was stuffing my face with coconut maccaroons trying to stop the D. Didn't work but it also didn't give me a monumental gas attack. I would LOVE to make my own coconut ice cream but I don't want to buy an ice cream maker and then find out that coconut milk is the equivalent of high test. I also noticed that there was a little mucous expelled with the gas. Is this typical of guar gum? Coconut? Thanks for any info as to what could be causing this mess.

The good news is that you were able to get rid of the gas. One of the main causes of my misery when I was having a reaction, was that I couldn't get rid of the gas, sometimes for days.
The bad news is that an increased presence of mucus is a sign of inflammation. When the intestines are inflamed, they produce copious amounts of mucus, in order to try to coat the surface with a protective film, to help shield against whatever is causing the inflammation. A little mucus is not a big deal, but a lot is sometimes seen with MC, and a lot would indicate massive inflammation.
I hope your reaction is short-lived.

Tex, Sometimes the gas stays right where it is and that is really uncomfortable. I'm sorry you had that type. Both times I've eaten the SO coconut ice cream I've had monumental gas that thankfully left the premises. In order to find out which ingredient I'm intolerant to, I have to eat something without coconut and with guar gum and vice versa. I guess I'll look for a coconut base ice cream without guar gum and try that. It isn't that important but is something I miss. Thanks.
