Hi Jari,
I found a good bread cookbook for GF and other recipes for a bread machine. For 2 years I made a loaf a week. Although eggs were ruled out by Enterolab, I found I can eat eggs if they are incorporated into a recipe; bread, muffin, cookie, etc. I'm not at my home in Florida so I'm guessing that the name of the book is, "125 Bread Recipes for Bread Machine". I've tried bread made from almond flour only but it was so heavy, my stomach couldn't handle it. I have a Zojirishi bread maker and it's excellent. If you plan on remaining GF and love bread, consider investing in a bread machine designed specifically for GF blends.

I'm now eating Samis Bread. It is made in a facility that makes non-GF products but I haven't had a problem with it and it is very good. I got awfully tired of making everything I eat from scratch and tried Samis

I think Udi's is the best one I've been able to find commercially. That said, I dont' think we will be able to find a really good bread because I think it needs gluten to get to that level. I did try a potato bread the other day that has promise but still not a lot of flavor. Good bread is really the only thing I miss too. I was really into baking artisan breads before MC hit. Barilla GF pasta is the best pasta I've found. Deb

Jari, if you make your own, I've read that chia seeds can be used as an egg substitute. I haven't tried it though. Deb

I'm in the UK so don't recognize any if the USA brands.

I can't tolerate GF breads but can eat the Warburton's white bread squares.

Warburton's make a GF option but they charge double the money for it and I can't tolerate it. :-) Serves them right!

Sami's is hands down the best tasting/best texture GF bread I've found: http://samisbakery.com/shop/millet-flax-bread/ Added bonus- no corn, soy, yeast, or dairy. I'm able to purchase it from my local health food store, but it looks like you can order it from their website.

If any of you are in the Detroit Metro/Ann Arbor area, Rumi's bakery has GREAT, moist bread.
