Warm and Nutty Cinnamon Quinoa Cereal

Hi All,

Quinoa is a true paleo food. I got this recipe from http://www.kfsm.com/lifestyle/food/sns- ... ory?page=2 ,

except that I changed the type of "milk" used. I see no reason why blueberries, or any other favorite berry, couldn't be substituted for the blackberries, and if pecans don't work for you, walnuts or some other nut should work just as well, or leave the nuts out entirely, if desired.

Warm and Nutty Cinnamon Quinoa Cereal

Makes 4 servings

Preparation Time: 5 minutes

Cooking Time: 20 minutes

1 cup of your favorite milk substitute

1 cup water

1 cup organic quinoa, such as Trader Joe's or Bob's Red Mill

2 cups fresh or frozen (and thawed) blackberries, organic preferred

1/2 teaspoon ground cinnamon

1/3 cup chopped pecans, toasted

4 teaspoons organic agave nectar, such as Madhava brand

Combine milk, water and quinoa in a medium saucepan. Bring to a boil over high heat. Reduce heat to medium-low; cover and simmer 15 minutes or until most of the liquid is absorbed.

While the quinoa cooks, roast the pecans in a 350 F toaster oven for 5 to 6 minutes, or in a dry skillet over medium heat for about 3 minutes.

Once quinoa is done cooking, turn off heat; let stand covered 5 minutes. Stir in blackberries and cinnamon; transfer to four bowls and top with pecans. Drizzle 1 teaspoon agave nectar over each serving.

310 calories per serving, 30 percent from fat; 10.7 grams total fat; 1.1 grams saturated fat; 2.4 grams polyunsaturated fat; 4.3 grams monounsaturated fat; 6.8 grams fiber; 46.3 grams carbohydrate: 11.8 grams sugar; 10.3 grams protein; 46.5 mg sodium; 138.7 mg calcium, 36.4 mg magnesium, 269.4 mg potassium.

Sounds like a good recipe, Tex. I never thought about adding cinnamon to the quinoa.

The cinnamon is what caught my eye, too. I haven't even tried this recipe yet, (the weather's not cold enough for hot cereal here, yet), but quinoa is so bland by itself, that it definitely needs something, and the cinnamon sounded to me like a good start, for sprucing it up a bit.
