Airy middle..
This bread is very forgiving.
After baked off, I take it out of the pyrex and let it cool. If I'm not going to eat any right a way, I slice it and put the slices between waxed paper. Then wrap in siran, then in a gallon size ziploc.
It is great lightly toasted.
If you want to make a sandwich, microwave for a few seconds and it will resume its airy texture.
If you go on a day trip, make up the sandwich, wrap in siran, and there are all kinds of places that will let you use their microwave or they will nuke it for you. About 10-15 seconds.
