Beet Kvass (Detoxifying Tonic)

Beet Kvass (Detoxifying Tonic)

This recipe is from Eat Fat Lose Fat by Mary Enig and Sally Fallon. From the book: "One 4-oz. glass of beet kvass morning and evening is an excellent blood tonic, promotes regularity, aids digestion, alkalizes the blood, cleanses the liver, and is a good treatment for kidney stones."

3 med. or 2 lg. organic beets, peeled and coarsely chopped
1/4 cup homemade whey
1 Tbl. sea salt
Filtered water

Place beets, whey, and salt in a 2-qt. glass container. Add filtered water to fill the container. Stir well and cover securely. Keep at room temperature for 2 days before transferring to refrigerator. To serve, pour through a strainer.

When most of the liquid has been drunk, you can fill up the container with water and keep it at room temperature for an additional 2 days. This batch will be slightly less strong. After the second brew, discard the beets. You may, however, keep some of the liquid and use it as your inoculator instead of the whey.
