Here is a quick, easy desert just in time for Valentine's Day, modified for our intolerances, originally from Health Magazine. I plan to explore the site to look at their GF department.

2 T peanut butter 1/4 C chocolate chips (I used Enjoy Life)
2 T milk (I used Hemp) 3/4 C GF oats

Heat first 3 ingredients in a pan for about 3 minutes, or until chips melt. Stir in oats and remove from the heat. Drop by spoonfuls or use an ice cream scoop to make 8 balls. Place balls on waxed paper on cookie sheet or pan. Set in refrigerator for 10 minutes. Makes 4 servings.
