Suggestions for gluten free wedding cake?
Hi. As I have posted a few times lately, I have decided to start a gluten free diet so I can hopefully get off of entocort. It is a lot of work trying to figure out what I can or cannot eat. I am very lucky that my fiancee (we are getting married July 16th) is very supportive. He is willing to eat whatever I can eat at home and is coming home every nite with something new from the Coop that is gluten free.
Just today he told me that he stopped at a bakery to ask them to bake a gluten free wedding cake for our wedding in July.
It would be impossible to do this if my live in partner was not behind me and I guess I have to say I am lucky to have him.
Does anyone have any suggestions for what kind of wedding cake we can have that would be gluten free?

Chelsea Clinton had a gluten-free cake at her wedding, which I bet kicked off a lot of innovation in the cake world.

If your baker doesn't have GF recipes they're proud of, you might want to request a sample before you commit to a whole cake for such a special occasion ;)

Hi, Andi- My niece, who has celiac, got married on Jan. 1st. She had a small gluten free wedding cake, but also had a regular cake for her guests. I tried the gluten free one and actually liked it better than the regular one.
My daughter is getting married Oct. 1st. We have been making all of her plans together, but she called the other day to ask me to go cake tasting with her...I was very sad that I couldn't go because none of her cakes will be gluten free. She called me later to tell me what flavors she and and her fiancé had chosen. She was so excited. I wish I could have shared that moment with her.

My husband and I did the 2 cakes...I had a gf one lined up by a baker here in VT who ended up in the end not having time to do my cake. So we went to a local cake decorator (who uses betty crocker mixes, but decorates wonderfully) and he did a regular sized one for the majority, and DH and I cut the GF cake that I baked from a mix (GF Pantry if I remember right) and took to him to decorate.
Having said all that about mixes, King Arthur Flour has a WONDERFUL GF chocolate cake mix. You would absolutely, never know it was gf if you hadn't seen the box!

gluten free bakery in NW
Sorry this may not help with your quest in finding a wedding cake that is gluten free due to location. It reminded me though of this awesome bakery in Lake Oswego, OR. The BEST cupcakes and cinnamon rolls. They do ship those items. Expensive, but so worth it.
Makes me hungry just scrolling around their website. The toasted marshmallow frosting is my fave! Name of place is fitting.

not sure how BIG you want the cake, if there are lots of people to make it easier, one suggestion is to have one layer or section 'gluten free' and the rest of it normal.
my friends and i used to quite a bit of cake decorating and i have done quite a few cakes for engagement parties and even a couple of cakes for small weddings.
be cautious, the white moulding icing used, is based on a wheat based glucose, i have not been able to find gluten free decorative icing, it is because of this i have given away all my cake decorating tools, colourants etc as I didnt want gluten based products in my kitchen and with my changed diet, i found the smell of the icing made me sick.
a way to make a lovely GF icing is using Ganache (which is chocolate and cream) we used to ice the cakes in ganache and the use the ganache to hold pieces of chocolate around the cake (you melt the chocolate, spread it thinly on baking paper, set it in the fridge, then cut it into shapes to then attach to the cake)
If you are interested in doing this and want to see photos, let me know and i can scan some in and put them up.
the very reliable GF product producer 'Orgran' have a GF/DF/SF/YF chocolate cake mix. On its own the cake is ok but as it is 98% fat free and low sugar and it can be a bit so so. I replace half of the liquid requirement with 'Bonvita rice milk chocolate' and put a little bit of rice bran oil in it. This makes the cake smoother and richer so it is more like a mud cake.

I would imagine if you don't have any bakeries which are exclusively gluten free in your area there might be some private bakers skilled at wedding cakes who might be willing to try their hand at making the cake or even make a smaller side cake which is gluten free in addition to a regular cake.
We have a fabulous bakery in Pittsburgh which is exclusively gluten and casein free and is now making vegan delights as well. They do ship and have done some beautiful wedding cakes but I would doubt they would ship a wedding cake and if they did the shipping would be outrageous.
