My first tentative toe into challenging rice was when I ate some Rice Chex last night. So far, a-okay. But reluctantly, I have had to start paying attention to the fact that after I have my scrambled eggs with Romano cheese almost daily that I have many rumblings and grumblings. And it's not the cheese because I can eat only cheese for a snack and all is quiet.

Nancy saying that some people who are sensitive to eggs are able to eat them if they have been cooked in baked goods is intriguing. I will have to keep that in mind as I challenge rice over the next few days.

On the allergy front, I thought I was okay with both sweet potatoes and pistachios. I had sweet potatoes for supper night before last, and pistachios have become my snack of choice but we were out of them for a few days until (you guessed it) day before yesterday.

Yesterday I had some GI issues, which I attribute to the fiber in the sweet potatoes. What bothers me is that my lips got warm and tight, meaning they were starting to swell. Last night I could tell they were starting to break out. It's not any worse today, but now I have to figure out if which one of the two it is. Since I am not eating corn, legumes, or nightshades, my veggie choices are pretty limited, especially with the thyroid and fiber issues.

Marliss, it's so interesting how different we are - I can't believe you can eat cheese!

I am, of course, sorry and sympathetic at all the "can'ts" and "not-sures" in your note. I seem not to have a problem with sweet potatoes or fiber. (But sometimes I think, what do I know, really?)

It would not surprise me if it turns out, down the road, that I could have eggs as an ingredient, even if I can't carry hardboiled eggs everywhere I go (which was my dream for summer convenience).

Gabes figured out that she can have some things separately, but not together. That could be the case with rice and cheese, for you (as for me... I wonder if I am clever enough to figure that out).

Hope the rumblings subside uneventfully.

It also could be the Rice Chex, rather than the rice. Many celiacs react to the Chex cereals. Apparently General Mills hasn't quite figured out how to keep the gluten under "safe" levels.

I thought about that when eating the Rice Chex, Tex. There are mixed tocopherols in the Rice Chex, but I didn't have a problem with them, and so far the rice I have eaten in the last two days has not bothered me at all.

I guess I wasn't clear--the allergic reaction started during the day after eating sweet potatoes and pistachios, and before I ate the Rice Chex. Also, I was at a friend's house before eating the Rice Chex and reacted to their dog, which I would not have done if I wasn't already reacting to something else.

I ate some pistachios yesterday to see if the allergic reaction continued, and it at least has not worsened. So... I will still have to challenge both of them, because with the pistachios it may be a case of reacting initially and not later. With the sweet potatoes, I don't really know. I ate them every day for a few days a couple of weeks ago with no problem. It's a mystery.

I can eat rice but i still have a problem with Rice Chex. I though it might be the preservative BHT because most preservatives give me problems. I agree that it might be something in the Rice Chex and you are Ok with rice.

Arrowhead Mills makes a cereal called Rice Flakes. I like it better than Rice Chex.

It has just occurred to me that the reason I don't really like cereal might be because neither grains nor milk have been agreeing with me, probably for years longer than I was aware.

Breakfast is solved! Rice tolerance permitting, of course ;)
