I'm jealous of all the options available. However the article goes on with some pretty stupid comments from
a spokesperson from the American Dietetic Association:
“There’s no health benefit in cutting out gluten unless you’ve been diagnosed with celiac or an allergy,” continues Ansel. “It’s actually very difficult to get all of the nutrients you need with a strict gluten-free diet.”

I love that the big missing nutrients they're afraid we won't get from wheat are - wait for it - the very things that are used to *fortify* wheat, because it's such a lousy source of nutrients.
My husband took our dog on a long walk and brought home excellent GF muffins from a place that's also vegan (so no milk/eggs). And they were also soy free. Best of all, they were based on coconut, so I didn't have the 11am feeling of being starving (as I would with any grain), and they were truly delicious. I have not been eating breads or muffins at all, and I think my darling was relieved that I was open to this occasional variation on our routine.
This place isn't "about" being GF, but it has really healthy, terrific offerings. We also had their coconut kefir, YUM!
