Sweet Cornbread

I know some can't have corn, but for those of you that can tolerate it this is a good recipe.

1/2 c butter or solid shortening
1 c sugar
2 eggs
1 c yellow cornmeal
1-1/2 c GF flour blend
2 tsp. baking powder
1 tsp xanthan gum
1/2 tsp salt
1-1/2 c regular or dairy free milk
Beat butter/shortening and sugar together
Then add eggs & beat well
Add cornmeal, salt & baking powder
Add flour & milk and mix well
Grease an 8x8 2" square baking pan or a 9" round
Bake at 375 for 30-35 minutes and test for doneness.
Another variation that I thought of for when my grandchildren visit is to use the same cornmeal batter and chop up a package of hot dogs and add it to the batter. Then take muffin tins and add the paper liners .
Fill them 2/3 c full and bake for 15-18 minutes . End product is just like eating a corndog!!!!
