Healthy candy bar

Post by Barb1 »

This is a healhty replacement for a candy bar.

SHANIBAR

1 cup chopped dates
3/4 cup nut butter
1/2 cup flaked coconut
3 tablespoons cacao powder or cocao powder
1 pinch of salt (opt)

Place all in a food processor. Cover, and blend unti smooth about 4 minutes. The mixture will be very sticky. Press firmly into a loaf pan lined with waxed paper. Refrigerate for 30 minutes. Remove mixture from the pan and slice into 6 bars, wrap each in foil and refrigerate until serving or freeze.

I substituted shaved almonds in place of the coconut flakes.
I also added (near the end of blending) chopped dried tart cherries.
I've tried making a double batch, but it is to hard to mix, but 2 seperate batches fits in a 9x13 pan. I cut it right in the pan then removed it.

Hope you enjoy.
