I made this recipe http://www.foodnetwork.com/recipes/alto ... index.html substituting sweet rice flour. I did use dairy but I suspect any mild "milk" product could be used. They were easy and good. I made half a batch (using about 3 tbsp batter per crepe) and ended up with 9 of them. I really like the sweet rice flour for things like this. It's less gritty than regular rice flour and works really well for things like gravy. I find mine at the Asian market but it's online and I've also ground my own (from short grain - sushi - rice) but I can't get it as fine. I stuffed mine with a crab mixture (dairy) but a nice, thickened broth with meat and veggies might work well or sweetened and filled with fruits for a dessert. Deb
