GF/DF/SF Dinner Rolls

I make up a GF flour blend for this one and keep it in a ziploc bag.
Flour Blend:
1-1/4 cups brown rice flour
1-1/4 cups white rice flour
1 cup tapioca flour
1 cup sweet rice flour (Mochiko)
2 teaspoons xanthan gum

3 cups of the above flour blend
2 teaspoons xanthan gum (yes, in addition to what's in the flour blend)
4 teaspoons baking powder
1 teaspoon salt
1/4 cup sugar
2 tablespoons GF active dry yeast
2 cups warm (110-115 degrees) DF milk sub)
2 teaspoons vinegar
2 large eggs
1/4 cup extra virgin olive oil
Melted butter (Earth Balance GF/DF/SF)

Butter & flour muffin tins

In a small bowl whisk 1 tablespoon of the 1/4 cup sugar in the recipe into the warm milk, and add the yeast.
In another bowl mix the dry ingredients.
In your mixing bowl add the wet ingredients and mix together.
Then add the activated yeast mixture and stir well.
With a paddle attachment, add the flour mixture and on low beat until ingredients are combined.
Then turn mixer to high and beat 3 minutes.
While I am doing the above, I have my oven preheating to a temperature of 200 degrees. I use this temperature to proof any recipe that calls for a rise time. You get your oven preheated, have the batters in the correct baking pans and ready to go into the oven. Then turn off your oven and put whatever you are baking in and let it double in size.
Spoon the batter muffin tins to 3/4 full.
Dip a sharp knife in flour and make a deep slit in the tops of each roll.
Now put in the oven to proof.
After they have doubled in size take out of the oven and turn the oven up to 375 degrees.
Brush the tops with melted butter.
Bake for 20-25 minutes.
I have made this recipe over & over and family & friends can not tell they are gluten free!

Dee...thank you!!

I can not express how much I enjoy all the recipes you have shared with us means. I am not a great cook by any means, but take an awful lot of pleasure preparing something that my family really enjoys eating. Before my diagnosis and finding this wonderful forum, nothing sounded appealing to cook and I was worried whatever I made was going to make me feel worse than I already did. Armed with great information, and a slew of new recipes to try... this is an exciting adventure for me. I also feel like I can take an active part in healing myself (and possible my family). So ...thank you...on many levels.

You are so very welcome!
I really try to add recipes in the kitchen that aren't complex and are easy and have most ingredients that you would have on hand.
The recipes here are are tried & true and I hope this peaks an interest now in cooking for you & your family.
