Calorie count + for Paleo Muffins

One of our wonderful members told us about a website called Myfitnesspal.com. You can enter recipes into their calculator and find out calorie, fat, carbs, protein etc for each recipe. I put the Morning Glory (Paleo) Muffin into the calculator using zucchini in place of carrots, pistachio nuts in place of raisins and using unsweetened coconut and 2 T honey. Here are the results assuming you get 12 muffins from the recipe. (I get 12 muffins + 4 mini-muffins because of the size of my muffin tin)
Each muffin contains:
Calories 360
Carbs 15
Total Fat 31
Protein 9

The site is interesting, especially for those of us who have to make a lot of basic foods. Next I'm going to find out how many calories are in the chocolate chip cookie recipe found in Elizabeth Hasselbeck's GF cookbook. I shouldn't eat them but they are REALLY good and I've modified them to fit my intolerances. Between the paleo muffins and cookies I've been able to stabilize my weight. The cookies are definitely not paleo and I should not be eating chocolate. However, life is too short not to eat chocolate if it doesn't make me sick and, so far, I don't have any problems.

I haven't had to do Paleo but I do have that same cookbook and those cookies are YUMMY!!!!!!!

I have one of these muffins every morning with a banana or blueberries and/or sometimes almond butter. Didn't know they were so high in calories. Although, my muffin pan being so very old, will make about 15 to 18 muffins. But, this muffin recipe is actually "magic" because it does not seem to cause weight gain.

Mine probably also have more calories because I could not find unsweetened coconut anywhere, so I use the sweetened. My health food store is very small, but I do wish they would carry more items like unsweetened coconut.

Thank you for this information. I will try entering the recipe in the calculator with sweetened coconut, pumpkin, raisins, and the honey.

Thank you for sharing that information Sheila. I'm so happy to see that the muffins have a lot of calories, as I struggle to hold on to my weight. I don't use sweetener in mine, and do them very plain. I have found that doubling up on the apples instead of using veggies make them very fresh and palatable for me. I'm considering adding raisins next time I bake them.

Paula - you'll readily find the recipe(s) in Dee's kitchen. They are very easy to make, and almost impossible to ruin :).

I actually did ruin a batch of muffins, due to not having enough almond flour and substituting coconut flour for the remainder. I only had about 1/2 cup almond flour. Big mistake. My muffins were crumbs. I should have added more liquids, I think. I'm sure I'm the only one that could ruin such a great, easy recipe!

I also use more apple and less carrot. How are you using the pumpkin? what are you taking out? I chop dates instead of raisins. I get about 16 muffins from the recipe.

I've made the muffins with 2 cups carrots (when I could still eat them), zucchini, canned pumpkin, bananas and the called for one apple. If I have less than 2 cups of the above fruit/veggie I just add more apple. Kari is right on noting that the additional apple is delicious. I put in chopped pistachio nuts and that adds a lot of calories. Raisins are a good addition if you can digest them.

I figured out the calories for Elizabeth Hasselbecks's chocolate chip cookies and they are a whopping 185 calories +- per cookie!!!!! My recipe is slightly different and I do add chopped nuts and mini chocolate chips so the original recipes is probably a little less. They are very good and worth the splurge.

Thanks for finding out the calorie count! I am thrilled to know that they are high in calories, since they are a mainstay of my diet. They make a perfect breakfast or snack food, IMHO. Would you mind adding a post to the "famous" paleo muffin thread in Dee's Kitchen to make a note of this? Thanks.

Gloria, yes the cookies do call for 2 eggs. I notice that the magazine "Living Without" is advertising a GF cookbook with nothing but cookie recipes. You might find something in that book or by going to a site like Punchfork and checking out the GF cookie recipes. I'm so happy with the chocolate chip cookies I stopped looking for any other recipes. I think the next time I make them I will make each cookie smaller and cut down on the calorie bomb.

Polly, I will add that information to Dee's Kitchen. Between the muffins and the cookies my weight stabilized and I've gained back 2 lbs. After a few months on the semi-paleo diet, I notice that meat is going down a little easier and I find it less offensive. Our bodies can get used to almost anything, I guess.

I'm always looking for something to accompany meat/fish and came up with zucchini pancakes. I make them with grated zucchini, almond flour, eggs, grated onion, baking powder and seasonings. For those who can tolerate cheese, parmesan on top is good. I cook them in clarified butter and oil. If anyone wants the recipe, let me know.

The zucchini pancakes sound pretty good, and I'd love to get the recipe. I've been on the lookout for lower carb/paleo substitutes for potatoes and rice!

Zucchini Pancakes - GF

2 C grated zucchini
2 lg eggs, beaten
1/4 C minced sweet onion
1/2+ C almond flour (I have had to add extra flour to achieve the right consistency. Next time I make them, I will
measure how much more is needed)
1/2 tsp baking powder
1/2 tsp salt
1/4 tsp oregano
1/3 C grated parmesan
clarified butter and canola oil (I don't measure, just enough to film the pan and keep the pancakes from sticking)

Preheat oven to 325 degrees.

Mix dry ingredients and stir into the grated zucchini, egg, onion mixture.

Heat a combination of about 1 T clarified butter and 1 T canola oil in a nonstick pan over medium heat. When hot, add the batter by the large Tablespoonful. Brown on both sides. These are best if they are nice and brown on both sides.

Add some clarified butter to an ovenproof dish and warm the dish in the oven. When one batch of pancakes is finished, put into the warmed serving dish, pour a little clarified butter and a sprinkling of parmesan cheese, and put into the oven to keep warm. These reheat well in the microwave. Enjoy.

We are such a creative bunch.
I have been making a sort of quinoa pie. I cook the quinoa to al dente, add grated onion, zucchini, sometimes carrots, spinach and any other veggies that take my fancy, eggs, seasonings, put it in a round cake tin and bake. It's good cold or hot.
You can add cheese, ghee, anything that could give it more flavor.

Another great quinoa recipe is making a salad with raisins, pine nuts, and a hint of curry. It's really, really good.
