just found new Gluten Free cookbook
The book is called 500 Gluten Free Dishes. I found it at Sam's and just finished trying the GF onion ring recipe. OMG tastes just like the onion rings from the fairs. I only ate a few because I don't want to push the gut with to much but refrigerated the rest of the batter to make some for my brother tonight. There is several yummy looking recipes in this book and am ready to try some more. I much more enjoy trying these new recipes than fretting over eating out and wondering whether I will get glutened!!!!!

Hi Lesley.............here you go
1C GF all-pupose flour mix....I used some from a local Celiac person that does her own baking and sells the flour
1C corn starch
1 1/2 tsp chili powder
1 tsp garlic powder
salt
2C club soda
mix it all up and dip away and throw in the pan. I cut my onions thin so I only put in about 1/2 inch of Canola oil to fry them. If you like thick batter on them........a little less club soda.....I like a thin coating so I made the breading mix pretty runny with just a bit extra club soda
