Bacon Wrapped Turkey Cutlets

Post by Dee »

4 turkey breast cutlets, pounded to an 1/4-inch thickness
salt
fresh ground black pepper
2 garlic cloves, minced
1 teaspoon dry basil
8 thin slices of prosciutto
4 tablespoons canned cranberry
8 slices bacon
Preheat oven to 375.
Place each cutlet on a piece of aluminum foil and sprinkle each cutlet with salt, pepper, garlic, and basil.
Add two slices of prosciutto to each cutlet.
Put a tablespoon cranberry on each cutlet.
Starting with the narrowest end, roll up the cutlet tightly.
Wrap 2 slices of bacon around each cutlet.
Wrap up turkey roll tightly with the aluminum foil.
Bake 25 minutes.
Remove from oven and open foil to expose the bacon.
Baste tops of breasts with 1/4 cup melted, Earth Balance- dairy & soy free butter, mixed with a pinch of sage, paprika, garlic powder.
Increase oven temp to 400.
Cook for an additional 10-15 minutes until the bacon is lightly browned.

Dee, this and your squash recipe both sound good. In fact, they might be "what's for dinner?" Thanks. Deb
