My first ever gluten free recipe!

OK so I only substituted ordinary flour for a GF white plain flour blend but it's an achievement for me given my recent habit of processed ready meal from freezer to microwave!!

Chicken Pepperonata cooked from scratch:
8 small chicken breasts
1 small onion diced
3 peppers (red, yellow and green) sliced
1 large garlic clove crushed
1 tbsp fresh oregano
400gm tinned plum tomatoes
salt and pepper
Coat chicken in GF flour and fry in 2 tbsp olive oil until golden and sealed - remove from pan
Add onion, peppers, garlic, tomatoes, seasoning and oregano to pan
Bring to boil; place chicken on top, and simmer with lid tight shut for 20-25 minutes until chicken cooked.
Serve with mange toute, baby sweetcorn and mash potato!
