Pamela's chocolate cake mix

My husband baked me a Pamela's GF/DF chocolate cake for my birthday yesterday. It was actually pretty good! Tastes like a cross between a cake and a brownie. I wouldn't make a habit of eating this type of thing, but it was a nice treat and it was good enough tasting so that everyone ate it and was pleasantly surprised :)

Unfortunately, I have had zero luck with earing any of Pamela's products. Just always have a reaction to them.

Happy belated B-day Leah! I've seen that cake mix and wondered how those GF cake mixes taste. Nice to hear it was so good. I buy Pamela's GF/DF cornbread mix which I love. Very dense and filling though....can't eat too much.

I've looked at various Pamela's mixes but they all seem to contain at least one forbidden ingredient, usually soy

I do have a question-what kind of oil did he use in the mix?

I baked a Pamela's Vanilla Cake last week, and let's just say, it didn't agree with me.

How sweet of your husband to make you a gluten-free cake for your birthday.
I haven't tried any of the Pamela's cake mixes, but I use Pamela's bread flour mixture, and haven't had any trouble with it.

He used safflower oil Sydney. Sometimes the xanthan gum gives people problems. I didn't eat any GF products until I had about 6 months of healing under my belt.

Thank you, Leah.

I had made a Pamela's Vanilla Cake, and ended up with severe D. But, I had also started taking Culturelle, around the same time.

I had been on a GF diet, years ago, and it didn't bother me. My D.O. suggested the diet to help with my Hypothyroidism, but, it didn't change anything. And my G.I. Doc took biopsies for Celiac, and they were negative, and he said he preferred that I did not eat GF.

I've stopped taking the Culturelle, and Hubby is finishing the cake.
