Concerns about coconut milk for IBDs?
This is depressing, considering how many coconut products I eat.

Thanks interesting. I try and make sure a get "pure" coconut without guar gum thickening. Of course, better is an actual coconut in its natural packaging (not a can). I hope that I can still have natural coconut......

I had not thought about it until this thread came round---I have not seen real coconuts in the grocery store in a very long time. Do they still sell them that way? I remember using a coconut when I was in middle school to construct a replica of a cell. I think my dad helped me clean out the milk and some of the "meat". We both probably got sore mouths from it.

I drink mostly coconut "milks" from the dairy case, so not canned, but full of other ingredients like carageenan, etc. I've often wondered how So Delicious and other companies get their coconut delivered to them in bulk to make the beverage. Do coconuts come to their factories whole or do they start with huge cans of pre-processed coconut cream?

I've just started eating coconut milk. I didn't think I would tolerate it because I do not tolerate coconut oil. But I tried it and found that it was not only delicious but I think it firmed up my stools. I have been using the Thai brand, yes guar gum. And I just found the non BPA cans of Native Forest, yes guar gum. I think maybe the guar gum is thickening up my stools!!! It seems to agree with me so I hate to change. I don't like the idea of additives but I am all happy with firmer stools!!! If I tolerate guar gum should I not consume it???

I noticed being quite sick after coconut milk before I went on the elimination diet. I was convinced it was due to the guar gum. Since January 1st I have only eaten lamb, sweet potatoes and bananas on the elimination diet and added wild cod, lobster (on Valentine's day ), squash, regular potatoes without any problems. I was really looking forward to coconut. I tried out organic creamed coconut from Amazon (the only ingredient is organic coconut) last week. The first day I had maybe 1/4 to 1/2 cup, mmh, delicious! The next day my intestines felt just slightly off, and I thought, well, they have to get used to something else than sweet potatoes. I had again 1/4 cup on the second day. It took about an hour and I felt so sick!!! I am glad I only had such a small portion. It is disappointing, though. First of all, I love the taste of coconut, second, it is really great to replace dairy products in recipes.
I will give it another try in a month or two. But I am wondering, would I be able to tolerate coconut flakes? Or coconut butter? Just not the coconut milk? I guess time will tell.

I struggle with coconut milk because of the guar gum as generally it is soy based.
I have not been able to find additive free coconut milk in Australia.....
I can handle coconut water, coconut flour, coconut oil no troubles at all....
