Energy bars

Post by Deb »

I made these energy bars from Cook's Illustrated (America's Test Kitchen) and they're easy and pretty good.

Ingredients are
6 ounces pitted dates (1 cup)
¼ cup sunflower seeds
¾ cup whole raw almonds
2 tablespoons chia seeds
¾ cup dried cranberries (I used dried tart cherries)
2 tablespoons coconut oil

A funny part to this. I forgot my dates had pits in them and couldn't figure out why my food processor was nearly spinning
off the counter. Everything chopped except for the pits!
