First, for what its worth, I would like to share my experience with the Paleo/SCD. I have been GF for a few years now, but continued to have issues. Its been about 4 months now that I have been on a modified paleo diet (I eat homemade cheese) and I have not had any flairs, regained my normal weight level, and in general have greatly improved digestion.
However, like many of us here, I seem to have developed a thyroid issue. Although I am much better than I was, I still have fatigue, insomnia,low libido, and difficulty with cold. My TSH level was high enough for a endo to diagnose me with hypothyroidism, and prescribe synthetic T4 hormone. I decided not to go for the drugs and instead have been treating mainly with accupunture. While I have seen some improvement, it has been slow and I think most of it maybe due to the paleo diet as I started it about the same time.
I recently came across this book - "Why Do I Still Have Thyroid Symptoms?" by Dr. Datis Kharrazian. Is anyone familiar with this doc, used his protocol or know someone that has? The book is very interesting, his basic premise is that hypothyroidism and hasimotos is caused by inflammation from a dysfunctional immune system often the result of gluten or other dietary intolerance. He claims to be able to heal these issues with diet and vitamins. Sounds good to me, but if you look around, there are many people skeptical of his work. Mainly because they say he gives seminars teaching other chiropractors, with the intent of having them sell his own brand of supplements, and his fees are exorbitant.
I know many here use armour or other non prescription NDT. I have considered this, but I really dont want to self diagnose, and if its true that hypo or even hasimotos can be reversed, Id like to try before I have to take a drug for the rest of my life.
So, can anyone recommend a good endo or GP that works with NDT? Or is there anyone that knows of someone who has treated hypothyroidism successfully without hormone therapy?

My TSH was about 7, T4 was normal. Ive read a lot however (STTM) that lab values are not always so accurate, and it can be better to treat using symptoms... This link was posted in another thread here on the board, its very similar to the book I mentioned, in fact this guy may be on of his students...
