Have you checked out the posts at the forum at the following link? IMO, the older posts (IOW, start at the bottom of the list and work your way up) are the most useful.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.

Here's a pretty simple tasty soup to make and lasts a few days.
2 lbs ground turkey (more if you like more meat)
1 onion (if it doesn't bother you)
3 cartons GF chicken broth
Organic carrots peeled and cut bite size
Organic spinach
garlic
salt and pepper
Saute the ground turkey and onions in olive oil until they are fully cooked.
(add some salt and pepper to the meat and onions when cooking)
Add 3 cartons of GF chicken broth
Put the carrots and garlic (let simmer until the carrots are fully cooked)
Add the spinach and some garlic and let the spinach wilt
I also add some Everglades Seasoning (but it does have MSG)
(you could use Tony Chachere or any seasoning you like for extra flavor)
I don't usually add anything else but...you can substitute anything or add other veggies (organic peas)
or potatoes, quiona, rice, or GF pasta if you don't issues with those.
