Meat glue is used in "whole" steaks!! I guess I'll only be eating the crazy expensive, local varieties. How did I not know this??!?
n 2002, researchers from Mayo Clinic, Rochester, Minn., reported that gluten contamination is the single biggest culprit in patients who have a poor response to a gluten-free diet (Abdulkarim AS et al. Am J Gastroenterol 2002;97:2016-2021). One of the chief reasons is that an increasing number of food manufacturers and fast-food companies are using microbial tTG, or “meat glue,” as a means to cross-link proteins and give processed meat its desired shape. Even products as seemingly innocuous as turkey bacon might contain this gluten trigger. Moreover, the FDA does not require food companies to list tTG on its labels because the agent is considered a “processing aid.” In these cases, even patients with celiac disease or gluten sensitivity who are the most committed to a gluten-free diet don’t stand a chance.
Considering that 7% to 30% of patients report continued symptoms when maintaining a gluten-free diet and many more patients find it extremely difficult to adhere to a gluten-free diet, some specialists are seeking out nondietary therapies for patients.
Unbelievable!!! Perhaps this is one of the reasons why it seems impossible for me to reach remission. After 3 years of gluten (and everything else ) free eating, I'm thinking seriously about retaking the Enterolab test. I believe my sensitivity to gluten is extremely high since I have double celiac genes.

Hi, Great post Zizzle. The only processed meat I eat is Hormel deli meats and they say gluten free on the box. I will be calling them to ask the question about meat glue. Jon

I haven't posted in a long time. I was reading the posts up until two weeks ago when I became very involved with other things. This topic caused me to respond.
I had purchased at Costco some time ago their cooked turkey breast which I would cut in chunks and freeze. One day while in the store I thought to myself these large packages of turkey breast look more like the shape of ham and I thought I bet this turkey is pressed together with this glue to create this shape. Since then I no longer buy them. I buy turkey tenders at Sprouts and they look like turkey tenders.
