Hi Gloria. I am experimenting with sorghum flour now and potato starch. Do you have any good muffin recipes that are eggless, and have very few ingredients? I can do a little honey, baking powder,soda, vanilla, coconut milk, & sunflower oil.

I have put GF muffin recipes on the board that are eggless, but I've always used arrowroot, tapioca or xanthan gum in my muffins as a binder. In my experience, tapioca and arrowroot can be used interchangeably. Some use gelatin or softened flax seed as a binder.

I use the term "vegan" in my searches for muffin recipes because I think it's easier to substitute GF flour for regular flour than it is to substitute for eggs. Some use bananas and applesauce as a substitute for eggs, but I'm not able to eat either.
