Be aware that it may contain casein! I've been strictly avoiding gluten and mostly avoiding dairy, meaning I haven't been eating cheese, yogurt, etc., but I also haven't been scrutinizing labels for casein the way I have with gluten. For example, I recently ate a small piece of dark chocolate that I (wrongly) assumed wouldn't have dairy in it as it wasn't MILK chocolate or even semi-sweet chocolate. Now I know better.
Back to the vermouth. I use Noilly-Prat vermouth quite a bit for cooking and for the occasional martini, though it's been months since my last martini. I was using it the other night to make a sauce and just happened to look at the label, which says, "Contains milk caseins." This happened to be the "Extra-Dry" version; I normally use the original version, but the store was out of it the last time I restocked. Fortunately, I had an empty bottle sitting in the recycling bin, and it turns out the original version does NOT list casein as an ingredient. I have zero idea why vermouth, extra-dry or otherwise, would need milk in it, but then again, I continue to be surprised at how many things that would otherwise be gluten free have gluten added to them.
Anyway, just thought it might be worth pointing out for any cooks (or martini drinkers) out there who strictly avoid casein.
