Today was a good day....Excellent GF bread in the oven, sweet potatoes whipped with coconut milk, taco meat in corn shells with salsa and marinating beef for homemade jerkey. The best part is that I really like all of it.
I bough a Perdue Oven Stuffer this week. That didn't go as well. I removed the breast and roasted it and used the rest for soup. The short story is that I didn't react well to chicken and it's not the first time. The packaging says that it's all natural with no additives yet it's a problem. Maybe Tex is on to something with his thinking that soy contamination during processing stays with poultry. In any case, the food is going to good use. I've gotten beyond my famine behavior. I don't have to eat an unhealthy item just because I bought/made it. I don't need to eat it just one time. When in doubt, throw it out - Or, give it away.

Hello Joe, I read one of your earlier posts and I know you've been through a lot. I can see that you have a "moving forward" attitude. I always do better when I figure out what I need to do then move forward. It's harder to hit a moving target :dog: :lol:

A glass of lemonade or WINE!!

I buy rotisserie chickens in BJ's and they are gluten and soy free. The great part is that I don't have to cook it. One of those easy meals for a busy day.

Thanks, Nancy. I'll add that to my bag of tricks. and will probably try it down the road. My currently goal is to get rid of everything that gives trouble. My long term goal is to possibly tolerate offenders in trace amounts. Time will tell. I'm adding BJ's chicken to my "down the road" list.

I can't have chicken much to my distress. Still, I have become used to it.

Tell me how you do the beef jerky? And your bread? You can clearly eat corn, and tomatoes. I can't so I am more limited there.
I am tired of cooking and finding I can't eat what I have prepared. I have given away SO much food since I got sick.

I LOVE your attitude and need to get back to it.

Here is the link for the jerky. It's the "Homesick Texan" recipe. I used 1/2 of the cayenne pepper and I didn't have any chipotle so I omitted it. The instructions for my dehydrator stated that the USDA recommends the meat is precooked prior to or after dehydrating. I put the finished jerky in a 275 degree oven for ten minutes. I like the way it came out.

Morning DJ,

Well your attitude towards this disease, cooking and eating correct is one for the ages. I applaud you.

Lemonade is great but am with Nancy on the WINE!

Have found that my local market is also OK with the rotisserie chicken and am lucky enough to live in Amish Land where all summer and even last weekend I can go get BBQ chicken. They do them on weekends outside on a great cooker and no additives.

Reading and Re-Reading Labels

In turns out that the brand of Worcestershire sauce I used to make jerky contains soy :mad: I don't think my bottle was labeled as having soy, but it's on the new bottles.
I just ate some sweet potato corn tortilla chips that I bought after reading the label.......but apparently not very well, I guess. The chips contain milk. Reading names like Simply Nature and All Natural twists my little brain. N= needs improvement.
I read the label on a bottle of omega-3 fish oil. It lists the ingredients and then lists No milk, No gluten, No wheat, No lactose, No this, No that, but does not list "No soy", so I called the company. It seems that the fish may have been fed soy, which may have exposed the product to soy. Does this mean that farm raised fish also contain soy? Tex mentioned in a post that chicken may be tainted with soy. Deli ham sometimes contains soy. This is difficult. :shock:

Nancy, thanks for the heads up on BJ's chicken. I live nearby and it would be nice to have something to fall back on. And yes, wine makes the day even better!!

Maggie, I go to the Amish area a few times a year. I always see signs for BBQ but never stopped. I will stop on my next visit.
