Hi Terre,
Here are links to a couple of discussions about making your own, from cashews. In the first thread, the recipes that are being discussed can be found in post number 14 in the thread.
The Cashew Cheese Evaluation
Paging the fermenters--A REALLY GOOD CHEESE SUBSTITUTE!!!!!!
Unfortunately, these are not perfect replacements, and some of us cannot tolerate cashews (including me).

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.
If you can eat soy...they have some 'good' soy-cheese in Holland. Doesn't look really Dutch so you can probably buy it in the US as well..
Next time i'll be in the grocery, i'll check out for the brandname:)
And...don't know if you heard of nutritional yeast? Taste a bit (ok, even less then a bit, but still) as parmezan cheese..which goes well with pasta! And..it's pretty healthy as well (if you can have yeast, ofcourse)

cheese
Terre,
yeap, it's time to stop craving cheese (take it from this French girl :-) I've tried just about every substitute out there and they don't taste anything like cheese. Some of them are pretty nasty. You end up paying a lot of money for something that leaves a lot to be desired.

I think of cravings are like an alarm clock...when it rings, I hit the snooze alarm...and again, as long as necessary.
I acknowledge how desperately I want something, I remember what the outcome will be if I do eat dangerous foods, and I hit that snooze button. It's a case of saying no that little girl inside me who can be very willful at times. My job now is to protect that part of me and take care of her, not indulge her in wrong ways. When my husband has a massive stroke in 3 areas of his brain & I was exhausted with his care 24/7, my oldest daughter told me ,"you never know how strong you are until being strong is all you have left."
She was correct.

I just had a grillled "cheese" and tomato sandwich made with Daiya GF, DF, SF, cheddar style slices. The "cheese" has a little cheddar flavor. I probably would not eat it plain in place of cheese but I'm giving it a thumbs up for grilled cheese sandwiches. Next time I'll add a little salt because cheese is a bit saltier that this product. http://us.daiyafoods.com/
I finally found margarine (at a WalMart super store) that is GF, DF, SF, NutF but be careful when selecting this from the dairy case. This brand name has three margaringe products and it's likely that they are not all suitable for M/C. Read the label!! This company also sells lots of soy...not for me. Earth Balance natural buttery spread http://www.earthbalancenatural.com/
The millet bread gets an A+ www.samisbakery.com They are in Tampa, FL. Phone: 813-989-2722
