What is your current diet?
For those who found a diet and are having improved symptoms?
Do you mind telling me your diet and serving sizes?
My diet is primarily salmon, zucchini, coconut oil and water.
6 medium zucchini, 2 cans of salmon and coconut oil ~ 1200 calories/day.
My symptoms are mostly gone but now I seem to have a lot of gas and bowel sounds...and I never had this stuff so maybe I should try some other stuff because clearly MC is still active. I was thinking of dropping the zucchini but don't know what to replace it with.
It would help some of us newbies know what kind of foods we can expect eat/try in the future.
If there's already a thread like this please let me know. Thanks.

Currently I am eating about 5 oz of ground lamb, pork or beef for breakfast and lunch, and for dinner a 5 oz serving of chicken, pork or beef steak. In addition I cook several slices of bacon and also add the drippings to my meat. My meats are high in fat so I easily get 1200 calories from my meats. I eat sweet potatoes several times/day and have 1-2 Tbsp of Coconut oil. I am able to eat a banana, about 1/2 cup of applesauce each day, I usually spread my carbs out so I have an even supply for the day. I've recently found a coconut bar that agrees with me and that is an additional 200 calories. Not a lot of variety, but I like the meat and it seems to agree with me.

My diet has gotten much bigger since I started two years ago, but when I was starting out, I ate all meats. I also ate sweet potatoes and cooked squash and green beans. 1/2 c. applesauce at a time. You might want to switch to fresh/frozen fish instead of canned. Even people with no problems shouldn't be eating that much canned fish. I also was able to eat GF chex cereal with unsweetened almond milk and rice cakes with almond butter. I also ate eggs, but I know that some people can't. Whatever you try, test it for three days straight to see if it sits ok before moving on to the next food.

Once I found my 'always safe' staples, it have eaten the same thing for 4 years now.
Always veges:
Rice, potato, sweet pot, cauliflower, parsnip,
Sometimes veges:
Asparagus, carrot, peas, avocado
Pretty much all proteins,
Lamb, pork, veal, beef if it is minced, chicken, salmon, eggs (chook and duck)
Home made Bone broth
Meal ideas
-stew using minced meats and chopped veges, this freezes well. Freeze some into meal sizes for lunch at work
- Cooked veges reheated in a pan (bubble and squeak) with chook, or eggs or salmon.
I have this for breaky most days, and again for dinner
- Shepherds pie, using stew mix as the base, mashed potato and cauliflower on top
- good quality baking dish, peeled veges, pieces of chicken on the bone, high temp oven for 45mins or so..
In addition to these I can have
Coconut milk so long as the is no guar gum
Rice milk
Occasional peeled apple.
Black coffee, water.
Small amount of watered down pear juice
I have a rice protein powder I use with rice milk and coconut water

Hi. It looks like you just joined us in November. I at tons on bacon in the beginning. It has lots of calories and it tastes good. Yellow squash and zucchini were early foods for me as well as sweet potatoes and half of a small banana. I have been eating plain tortilla chips for a long time. It's good to try new foods in moderate quantities. I cook a turkey breast nearly every week and I make gravy with corn starch. Have you tried gluten-free rice chex or corn chex? They are nice with Silk coconut milk, which has the added bonus of being high in calcium. Can you eat white potatoes? How about home fries in bacon grease? Yummmmm. I eat ham with mustard as a snack. Before buying any of this, be sure to read the labels. Some contain gluten or other foods we are sensitive to
At the start I did well with lots of homemade chicken soup with carrots and celery, roast chicken, cod, pork. For vegetables, zucchini, winter squash, sweet potatoes, avocado, bananas. I also made muffins and biscuits with almond flour for breakfast and tried to add lots of coconut and olive oil to my meals for extra calories. Snacks were nut butters. I really turned a corner when I eliminated all grains and adopted a paleo diet.

I have fatigue too. It has improved a bit. I don't fully understand your comment about not having the ability to buy fresh meat. Are you far from a supermarket or are you talking about organic meat? Plain supermarket meat is usually ok. Ham and turkey lists added ingredients. I don't eat gluten, soy, or dairy so I look for that on the label. I also ask to read the label at the deli counter if I am buying sliced meat. Deli meat rather frequently contains soy.

I'm next to AnP supermarket and its the only one around here. I read from tex comments about some meat/chicken having injected with gluten so I am afraid to try anything since I have been improving and dont want to go back to where I was.
I bought jeanio o turkey burgers and the ingredients said "natural flavors" that pretty much scared me lol.

Have you read the labels on the meats at your A&P supermarket? Look for meats that have been minimally processed and do not have hormones, if they are adding a solution to the meat it will tell you on the label . Since you have not been eating meat lately, start with one kind of meat and try it for 3 days, if it works or doesn't try another. I have been able to finds meats that have been minimally processed and without added ingredients at all the supermarkets I shop at in my area.

Regarding buying chicken. You need to check both the top and the underside of the package for labels. Often the label that describes any injected solutions will be on the bottom, so you will miss it unless you turn the package over to look underneath.
Sanderson Farms is an example of a good brand to look for when searching for un-injected chicken. I think that all of their products are un-injected (but I'm not positive, so always check the label to be sure). Many of the other brands also sell un-injected products, but you have to carefully check the labels to locate them, because they also sell injected products that look the same (except for the label).
This same caveat also applies to pork, turkey, and reportedly even beef in some locations. Always check the top and bottom of the package to look for any label that might indicate that a "tenderizing" or "moisturing" solution has been injected into the meat.

Hi! I eat 4-5 oz. protein 3X per day (haddock, turkey, or venison), Teff/arrowroot waffle, sunflower seed butter muffin, arrowroot biscuits. That's about it for now. I found after many months of trying, I can't do veggies at all for right now. :(
Have you done Enterolab testing to see what you react to the strongest?
PS....Watch out for the words...."natural flavorings" on the meats....they contain soy.

I was diagnosed with LC a year ago and have experimented with many diet approaches while taking budesonide. For me, the biggest success has been following a paleo and low FODMAPs diet combined. It took me 4 weeks to start seeing improvements but I'm happy to say my stomach gurgling has stopped and I've had Normans for 1 week straight now!!

I've discovered that even though I've cut out a lot of foods such as grains, eggs, dairy and soy there's still plentiful food choices out there.
In fact I now eat a healthier diet than what I did pre-MC and a healthier diet than most of my colleagues! My vege intake has increased tenfold and I'm feeling better for it.
I prepare all my meals from scratch as eating out is risky but it's not that difficult. I also try to rotate my meals so I'm not eating the same thing day-in-day-out.
I take digestive enzymes (1 before each meal).
I've cross referenced healing approaches from various sources to pick up common themes. Reducing your stress and EMF exposure is vital along with ensuring you get plenty of sunshine for Vit D and plenty of sleep in a dark room (I've masked my blinds to prevent any light coming in through the windows). Light/low impact exercise is recommended too.
It's a holistic approach and I no longer believe one thing alone is the answer.
