Pizza/soy question

Post by Marcia K »

Good morning. One of the foods I miss since being diagnosed with LC is pizza. I didn't have it that often, but it was nice to have on a Friday evening after a long work week. Since I can no longer have gluten, cheese or tomato sauce I was wondering if anyone has found anything remotely close to pizza that doesn't contain those three things? Also, I occasionally eat tuna in a foil pack and it contains soy. The soy does not physically affect me and I was wondering if it will cause anything other than a physical reaction that I would notice. Thanks! Have a great day, everyone! After one of the coldest winters on record spring has finally arrived in PA! :-)

Marcia,

After checking out Martha's link above, I got inspired. I have had a couple of Udi's GF/DF/SF Pizza crusts sitting in my freezer for a long time, not really knowing what to do with them. I just spent 6 months w/out eating rice or rice products, but seem to be OK with them again, so I decided to give this pizza thing a whirl.

Here is what I did for my lunch, which I'm still munching on:

Started with pouring a layer of EVOO on the crust. Then some fresh garlic and celtic salt. Then came leftovers from yesterday afternoon, which were bacon and broccoli. Well, the resulting pizza is yummy and feels like a special treat  . Thanks for the link Martha. Hope it works as well for you as it did for me Marcia.

Love,
Kari

I grew up eating tuna pizza with mushroom and chopped green olives.

There aren't as many great choices out there for pizza, but I eat the Udi's frozen pizza crust and add my own ingredients.
I like to bake them before I put the ingredients on so the crust is crispy because it tends to get a bit soggy if not. I put gluten-free marinade on, then fresh basil and top with fresh sliced mozzarella cheese then sprinkle with fresh grated Parmesan cheese. It's very tasty and refreshing. I'm sure you could add other ingredients..I would cook any meats or veggies ahead of time then put them on so you really only have to heat the sauce and melt the cheese.

For me, by far the best bread and hamburger buns I have found are Canyon Bakehouse. If you can eat the ingredients, it's very close to "real" bread https://canyonglutenfree.com/bread/bakery-products.html

I hope they do a pizza crust soon!!

Hi, Instead of tomato sauce make a thick g-f white sauce. Jon

I make a pesto with basil, walnuts or pine nuts, olive oil, garlic, and salt.
