I was pacing the cupboard tonight for junk. Having a huge attack of the munchies.looked at the popcorn... Nope too abrasive. Found low salt potato chips but can't have dip so I microwaved the almond butter and used that! Hope I don't regret it in the morning! Lol
Finding snacks with diabetes and MC on an elimination diet is hard.

I ate about 8 chips with about 2tbsp almond butter that I microwaved to soften it up. Finding I really have to get creative with MC. Maybe it's the desperation that causes us to get creative with our diet.
Must admit that it was realllly gooood.
No ill effects yet this morning!

Are you aware that (even though the food police consider them to be disgusting junk-food) fried pork skins are a crunchy snack option that's generally safe for us? And they have zero carbs, so I would assume that they are safe for a diabetic. Snacks don't get much crunchier than fried pork skins, and no dip is necessary. :grin:

Depends what the fat content is. The higher the fat content the higher my blood sugar goes. I am finding that even adding an extra slice of bacon to my breakfast causes a rise in my post meal reading. I even bake my bacon so most of the fat runs off. I am considering changing to my beloved peameal Canadian back bacon. higher fat content in a diabetics diet causes insulin resistance. I have always been good with plain popcorn on my diabetic diet. I switched to low sodium baked potato chip cause I presumed popcorn is too abrasive during healing.
Experimentation yields results! Good and bad. I will check out the pork rinds next shopping trip! Thanks

I didn't realize there was a fat connection. One of Frito-Lay's brands (Baken-ets) shows 8 % total fat per serving, 2.5 grams of saturated fat.

My go to potato chips are Ruffles "Simply" low fat ones. I also eat corn chips and Lungrens rice chips. Black olives sometimes do the trick for me ( but I have to admit, I can eat popcorn now)
How did your experiment go?

I think the almond butter is causing some gurgling but no pain, no WD. It may just be too hard to digest or the gurgling is just my bowel moving things along, or I can't tolerate nuts.. I am not sure how to tell if the gurgle is a normal process or a negative symptom. I seem to be ok with almond milk.
I'll exclude almond butter for a week or two, then try again to see if I gurgle.

My go to snack is potatoe chips. I sometimes eat them with homemade guacamole dip. I also make a hummus dip which does not make me sick but makes me gassy :-0
I can't wait to try pork rinds as Tex suggested. I had never thought of them. I love this forum!
