maybe I can eat dairy?
Hi all. I'm hoping Tex reads this so he ponders it. As you know, I just went through surgery ( which is notorious for slowing down elimination). I didn't have a bm the day after, so I decided that it would be a great time to eat something that I "know" will soften things up…. DAIRY! I haven't touched the stuff in over 2 years. I had one scoop of delicious vanilla ice-cream ( dairy AND SUGAR). I can't lie. it was such a treat. Well, this morning i did go, but it was completely normal. Can it be that now that my gut is healed, I can tolerate dairy? Remember that I am IgA deficient, so I don't actually produce the antibodies. I know Tex, that you can eat dairy, but choose not to because you produce antibodies to it. But that doesn't really pertain to me. Any thoughts?

Hi Leah,
My guess is that you are not sensitive to casein. Of course every one of us is sensitive to lactose when our small intestine is inflamed, but a small but significant percentage of us are not sensitive to casein, so after the inflammation fades away, we are able to tolerate dairy.
That said, there's a remote possibility that you might require repeated exposures to casein before you react to it (since it has been totally absent from your diet for so long). IOW, there are other avenues that can trigger an immune system response that do not depend on the production of antibodies (mast cell degranulation being one of them), but I would think that a response by one of those routes would occur on the initial exposure (rather than to show up after repeated exposures), so you are probably home free. At least that's my best guess.
So maybe this cloud (the surgery, and the reason behind it) has a silver lining.

Tex is right. That cloud does have a silver lining if you are healed enough to enjoy ice cream and cheese again. I miss cheese more than I miss ice cream. Here's hoping you can eat as much ice cream and cheese as you want while you heal.

After cutting out dairy for over three years, I decided to try some cheese (the food I missed the most). I have tried, and tolerated, several different kinds, and no major issue. Last fall in Ireland, I (risky, I know) tried a few drops of cream in my coffee. No problem. Then, this winter, I decided to make a GF chicken pot pie whose crust called for butter. COMPLETE DISASTER. So, Earth Balance and I will continue to be BFs. I have not tested ice cream, as I am content with almond milk ice cream for the few times that I want it. The only time I use almond milk is on cold cereal, and I prefer it to cow's milk. I'm thinking about testing yogurt to see what happens, but will be content with almond milk yogurt if it doesn't work.

I usually don't eat ice-cream. Being in the health field, I don't indulge in dessert too often. Never have, but it would be nice to have a bit of cheese here and there. Never liked yogurt very much either. It's just nice to know that it won't be a disaster if they accidentally put sour cream on my Mexican plate :)

I tried GF Pizza Tuesday night. Was up most of the night with the worst heartburn I have ever had, nothing would help it. Had it all day yesterday, too. Have never had it during the day like that.
I read on the different pizza sauces in the store and settled on Classico because the others all had soy protein. Classico's ingredients:
Tomato Puree (Water, Tomato Paste), Diced Tomatoes in Tomato Juice, Sugar, Olive Oil, Salt, Spices, Granulated Garlic.
I used turkey pepperoni which I have eaten for protein off and on for about a month without problem. Didn't use any cheese.

I'm so sorry you have had such awful heartburn. I'm on a modified paleo diet and have given up nightshades, including tomatoes, which I love. I have found that I can eat a few, very thin slices of tomato occasionally without a problem. Tomato sauce, cooked and concentrated tomatoes, is much too acid and I haven't enjoyed it in a very long time. A local restaurant makes a GF pizza that uses thin slices of tomato instead of tomato sauce and I can eat that every once in a while. You may also find that you can sometimes eat a food and not have a problem and then try it again later and have a bad reaction. We have a little more leeway once the inflammation has subsided.
We each learn the hard way what works and what doesn't. Since stopping budesinide, I'm losing food that I thought was safe and had eaten without a problem. Eventually, I just gave up trying to "fix" favorite recipes. Simple home made, one or two ingredient meals seem to be the safest. Exceptions would be paleo muffins and butternut squash soup for me.

I too have tried dairy over the past 6 months with no problems. I've had GF pizza and have them go light on the cheese. I've had ice cream and whipped cream several times, but only small amounts and never on a daily basis. It is nice to have small amounts of dairy again. I have also had sauces with butter, but when I am cooking I use my safe earth balance. Everything in small amounts.
I have never seen almond yogurt, but would love to try it. I'll have to look closer at the store.
