Stuffed Pumpkin

Stuffed Pumpkin

You need

1 pumpkin- size depending on how many you want to feed
ground burger, of any kind cooked and drained
wild rice, cooked, drained and rinsed
*taste is best 2/3 meat and 1/3 rice
onion, lightly sauteed
salt
pepper
fresh or dried parsley, sage, rosemary and thyme

Cut hole in top of pumpkin- clean out insides and seeds. Mix cooked burger, rice and onions in bowl. Add seasonings to your taste. I like to use lot's of the seasonings. Mix well and stuff mix into pumpkin. Fill it full, gently shaking pumpkin as your adding stuffing.

Place pumpkin in glass baking dish with at least 1 inch of water in bottom of dish. Cover opening in pumpking top with aluminum foil. Not the entire pumpkin

Bake @ 350 till pumpkin is done. Uusally an hour for a smaller pumpkin. Test for doneness by piercing skin with fork.

To serve, place entire pumpkin on your favorite serving platter and cut cake like wedges of pumpkin and top with stuffing. Have some butter and brown sugar on hand for those that like to flavor pumpkin this way.

This is a delicious and fun fall meal. It makes a great presentation too
