Question for jean

Post by Vanessa »

Hi jean,
I've read on many of your posts that you do a modified paleo type diet. I myself am about to embark on the primal blueprint. High fat, mod protein and low carb. Since getting the diagnosis of CC ironically enough I think my carb intake went through the roof. Anyway my question is what does a day of food look like for you. I know I could really benefit from this type of eating but honestly the huge salads and tons of greens make me nervous(I could eat that way before). I have no problem with avacodos, coconut oil, and meats but without some greens or a lot of greens can you stay satiated? I know we are all different. I do have a fair amount of healing that's been done and can handle more verges than before. I seem to flare for a day or two every couple of weeks which I chalk up to womanly hormonal changes. I work 12 hour shifts and am very busy. Any advice on how to add enough good carbs without the risk of flaring. Anyone with advice. Potatoes and carrots are too high carb and used to be my staples.

Thanks guys

P.S. Someone on one of the threads was talking about earthing products. I myself have the mat, pillow case and half sheet. I highly recommend these products for anyone with inflammation or an autoimmune disease! I sleep a lot better and am not as sore after hard workouts.

Vanessa,

I would call my diet low carb paleo with moderate protein (pork, venison, turkey, lamb, cod, salmon, sardines) and high fat(coconut oil or olive oil). I eat either meat or fish 3 times a day. I eat a small quantity of berries, blueberries, blackberries or strawberries, no other fruit. I am now able to eat lots of greens and other low carb veggies but this is a recent development. For a long time I stuck to smaller quantitities of low carb veggies, mostly kale, swiss chard or collards always with coconut oil and always well cooked. Now I can eat larger quantities and even raw veggies but I waited 2 years before trying that. I eat nuts. I can now eat whole nuts but for a long time I ate only nut butters that I made myself with almonds or macadamia nuts, plus sunflower and pumpkin seed butters. I still make seed butters rather than eat seeds whole. I have a cup or 2 of bone broth every day. I sometimes have homemade coconut milk. I eat no grains. I don't eat eggs or chicken or beef. If you are limited in the amount of veggies you can eat then you have to eat more protein and more fat. Lately I have been eating liver and heart which contain lots of b vitamins. You really don't need a lot of so-called "good" carbs. You can exist just fine on protein and fat wth small amounts of carbs. For 2 years I ate hardly any vegetables at all. It's not a "good" carb if it's making you sick or slowing down your healing. Concentrate on eating sufficient quantities of the things that are helping you heal. You can add back the veggies later when your body is ready to tolerate them.

The only things I eat that are not strictly paleo are small amounts of dark chocolate and 2 cups of morning coffee.

Awesome jean! Keep up the good work. You should be very proud of yourself for sticking to it even after you felt better. Thanks for the encouragement.....I guess you can live on just fat and protein. Otherwise you or I wouldn't be here. Bad attempt at a paleo joke.
