OY!! Seems the air is filled with news of Holiday Baking and Sweets galore already! Catalogs, commercials, articles and recipes in magazines; it's all giving me a super-sweet tooth. Especially since I haven't indulged in Any cookies, cakes, muffins or chocolate since May, when I first got diagnosed with CC.

So - what does a person who is now gluten-free and has CC, ( though coming along well ) do?! What Companies (BRANDS) make SAFE cake and muffin mixes for us? What Brands make us SAFE cookies? Is there Any way or form to have some chocolate?!

Advice, please!

Hi Treese,

I'd look for a Gluten-Vegan friendly baking facility in your area, there has to be one. I live in a pretty rural area in SE Washington state and we've had one pop up in the last year and it is so wonderful to have. I made sure the stuff I eat from there is GF,DF,SF and I do ok with it, yes there are quite a few ingredients in some of the things but I don't eat a bunch of the product in one sitting either.

I also found Nestle Quik Syrup is ok for me too (not the powdered kind), I have been using it in my once in a while coffee and in my cashew milk and it makes great chocolate milk. I want to remind anyone that you have to be in an ok place healing wise to take advantage of this suggestion though.

The Cravings Place.com has a product line with a brownie mix that has been good, but again you have to be in a good healing place for it. That company also has other product mixes as well, I think Amazon carries most of them right now.

That's my two cents worth right now :wink:

The above products are gluten free, dairy free, soy free, and egg free..............

They have chocolate bars and I can get them at my King Soopers and you should be able to find them at any Whole Foods or health food place. They were ok, but I think that I just was without it so long that I lost my craving for it, so I didn't enjoy it as much as I thought I would........I did ok with it and had no symptoms. Their sugar crisp cookies are really good, and 1 of those every week or so really does the trick for me...............

I also really like the coconut bliss ice cream (dairy free, soy free, gluten free, and egg free).........the naked coconut is to die for, and the dark chocolate is really good, but again, I just didn't enjoy the chocolate as much..............

Thanks Jari, saw that coconut ice cream in my grocery and thought I would try it. Now I will! Enjoy life is really good! Sugar cookies are wonderful. Same here too Jari, 1 every so often keeps me from craving sweets. Strangely I don't crave them now like I use to chocolate neither. Thanks to magnesium, I believe..

Good to know about the chocolate for later. The enjoy life chocolate brownies did cause me some gas, so not for now.

Martha,

That coconut bliss naked coconut has been like a breath of fresh air for me........I absolutely love it.............no symptoms at all.............I don't care for the vanilla one much, and like I said, the dark chocolate was very good, but seemed really rich to me and I'm guessing I just haven't had chocolate for so long that I didn't enjoy it much.................I bought them when they were on sale, and I allow myself about a third of the pint a day................well, not every day but most days.............they have lots of other flavors but those are the only ones I have tried yet..............very few ingredients and all organic and relatively healthy..............

I hope you enjoy it as much as I do..................

Orgran brand is available via Amazon...
These are a very good quality from a manufacturer with strict strict gluten free production
(they have been the trusted gluten free food manufacturer here in Aus for over 15 years and the standard here is no detectable gluten)

they have vanilla cake, chocolate cake and chocolate brownie mixes. they are pretty good on their own and can be made egg free.

They are even yummier if you add some coconut oil or pure cocoa butter.

If you can tolerate cooked fruit, you could try baking apples or pears with a bit of oil, cinnamon, nutmeg and cane sugar (or honey). I just leave them in the oven until they get soft and then eat them with safe vanilla ice cream.

My mom always made apple crumble for the holidays so that flavor combination is something I was really missing.

Don't know if it's available in the US, but Screamin Brother's organic allergen free ice cream is amazing (warning does contain guar gum).

Wow...leave it to you all to come to the rescue with so many great resources I can now choose from! I made a Folder in my laptop favorites called Holiday Cravings with all the Websites and Info you offered. Thank you soooo much!

Isn't it great to even be able to contemplate some treats after so exhausting a path with constant "D", and just boiled rice and chicken for so long?!

Hi Treese.........

I'm in a place where I'm content to look and not touch! Hope you find something safe to quell those cravings. Check whether you're lacking something in your diet - that causes cravings too! Since being on Ionic Trace Elements, Selenium, Zinc & Magnesium my cravings have gone.

Hi, Treese. I posted a pumpkin bread recipe that is very good in the recipe section. I make it to take along on Thanksgiving and Christmas and while everyone is eating the other desserts I don't feel left out. I purchase Lindt 90% chocolate bars. One square is enough to take away a chocolate craving. I can't have dairy but I am OK with this chocolate. And I would agree, it is nice to be able to think about eating a treat after you have not been feeling well. Enjoy!

Marcia, that Pumpkin Bread sounds good! Now, when you say I/2 c. pumpkin, you mean from a Can? How does one buy pumpkin? I'm not really familiar with this.

And, with the Other ingredients, does the Vanilla or the baking soda have to be a special Gluten Free kind?

The "c." I assume means CUP, correct? *Thank You - TREESE

1/2 c. pumpkin
3 eggs
1 Tbsp vanilla
1/4 c. honey
1/4 c. coconut oil
2 c. almond flour
1/2 tsp salt
1 tsp baking soda
1 tsp pumpkin spice
1 tsp cinnamon

Hi, Treese. I use canned pumpkin. I buy organic canned pumpkin online from Vitacost but any canned pumpkin will work (make sure it's just pumpkin and not pumpkin pie filling.) C = cup. The vanilla I use has "gluten free" on the label so you want to check on that. I don't think that baking soda contains gluten, I didn't check on that though. I was sure to buy baking powder that is gluten free but that's not needed for this recipe. My son is not gf but he really likes this bread. Enjoy!
