The last few days my pooh has changed appearance, some stool appear thin and others appear flattened and everything looks a little 'roughed up'. So in one bowel motion I could have normal diameter stool and a combination of flat and thin as well. Also I have been going more often.
I'm not sure what to make of it?

If this is a downgrade from your previous status, then something in your diet is antagonizing your immune system. Either you are sensitive to a food in your diet or your diet has become cross-contaminated with gluten or some other food that you cannot tolerate.
Or maybe just haven't had sufficient healing time.
