Which was the culprit? Jerusalem artichokes, fennel or pears

Which was the culprit? Jerusalem artichokes, fennel or pears

Just when I thought things were under control I cooked some of these artichokes and roasted fennel. I have never eaten the artichokes before. I then got a ferocious reaction to something. The pears were in wine which had sugar in it. The artichokes have a lot of finer in the skins.

it could be any or all - having so many 'new things' with inflammation enhancers like wine, sugar etc would heighten reactions.

if you want to keep eating any of those ingredients, the only way to know is try each individually.

The advice with any new ingredient is to have small serving at first, if you had any more than 1/3 cup, the risk of major reaction is heightened.

Artichokes and pears are high in FODMAPS, so if you are sensitive to those type of foods that could have contributed to your reaction.

In addition to what Gabes and Donna discussed, adding sugar to wine might possibly restart the fermentation process, and that could amplify any mast cell issues associated with the possible FODMAPs problem that Donna mentioned.

I previously read an article about Jerusalem artichokes and bowel issues, which I now can't recall the source of. However, if you Google "Jerusalem artichokes and diarrhea" numerous articles come up. Some of them reference "fartichokes," haha. And the first article listed, funnily enough, is from Bon Appetit magazine.

So it seems like we probably should avoid those.
