You Won’t Believe It Cookies
1 egg
1c. sugar
1 c. peanut butter
Combine ingredients and shape into balls. Press with fork on ungreased cookie sheet. Bake at 350 degrees for 12-15. Minutes for desired chewiness. Do not overbake. Makes 3 dozen.
These really are good cookies. People can’t believe this cookie has only three ingredients.

This is not my recipe....I copied it from a GF newsletter. It has a lot of sugar, but someone might find it works for them. Just passing along.

thanks for sending on that recipe, I have used this recipe many years ago, with a slight variation , 1/2 cup of sugar instead of the full cup and I also chilled the dough in the refriderator for 3o mins after mixing together before rolling in balls. I made very small cookies and could still get 36 that way but most times didn't count them, all were just eaten and enjoyed.not in one day Ha! but would make more when they were finished, so easy... that was then and this is now. not looking back just onward and upward with unsweetened raw coconut flakes and a peice of 90% dark Lindt chocolate , love it for a snack... simple , I don't miss those sweet cookies and side affects from too much sugar...but that is me and my journey so far no complaints just adjustments as Gabes says" not about perfection, it is about progress." I am finding my way that makes my quality of life comfortable and enjoyable. Have a great day.
