I'm Ready to Roll!
Cleaned out fridge. Check
Went to the store and bought $60 of meat and cut up to freeze. Check
Toasted coconut almond milk. Check
And all good things. CHECK
Yesterday I made my first roast in the crockpot. I used a 1/4 of a portion of tri-tip roast (froze the rest cut into fourths). I sprinkled liberally with black pepper, drizzled about 2 T of pure maple syrup over roast and rubbed it in and then sprinkled about 3 t of sea salt and rubbed it in. I started the Roast in about 1/2 cup Swanson's beef broth, as I have no bones to do the bone broth yet. Cooked 8 hours on low and MY GOODNESS! Yummmmmmy! I added pieces of asparagus the last hour and served it over white cooked rice. If this is how it is, I'm onboard. No cravings later in the night and just one bathroom trip before bed. Usually I'm on the throne many times in the evening.
Anyone else starting Monday. Maybe it would be good to have a buddy to keep us both on track?
My official start day is Monday but this practice meal was amazing. Hubby liked it too!

You're off to a good start. If you didn't notice any problems after eating, then it should work OK for you. If any symptoms develop, please note that Swanson's Beef Broth contains:
Beef Stock, Salt, Yeast Extract, Beef Fat, Monosodium Glutamate, Flavoring, Caramel Color, Autolyzed Yeast Extract, Disodium Inosinate, Disodium Guanylate, Beef Extract.
Some of us react to the items that I've highlighted in red. Roughly 6 years ago I had to start avoiding MSG because it was causing me to have acephalgic migraines. Acephalgic migraines are migraines that involve visual auras that are not followed by a headache.
For future batches you might be better off if you switch brands of broth. You should be able to find allergen-free brands of broths that don't contain allergens, but you might have to order them online if your local grocery stores don't carry them.

Well phooey about the yeast stuff. On this can of Swanson's it said No MSG AND
Minimumly processed. I looked for Bone in meat at my store (Food for Less). Almost non existent.
Thanks for your eagle eye, Tex. I need to read labels closer. Still, all in all, I felt pretty good about this first meal. It tasted wonderful!

Hi PJ,
I know bones make the bone broth....but in a pinch a person could make a vegetable broth and freeze it so one has some 'broth' on hand for simmer meat such as what you made. A safe vege broth could consist of carrots, celery, cauliflower and sea salt placed in a crock pot and cooked for a few hours and strained. After the fact, that broth can be used in many things that require liquid and it would make a good gluten free noodle soup, just add some over steam carrots and celery or any other over cooked vege that is safe for you.
This way you stay away from all the 'additives' that are in store bought stuff.
What I am learning as I go along is the 'salt' brings out the flavors in every thing we eat....it hasn't been so much the food I have been eating but the salt that was in it that made it taste better. Test that theory out once in a while when you eat something that just doesn't flip your lid
