I use mostly coconut flour and almond meal/flour.

The other gluten free flour blends tend to cause me issues if I have too much. I have tried each of the flours individually and did OK, but for some reason all together they make me mildly react if I have too much in short period of time.

When cooking in 'mc world' keep in mind that without gluten and the soy based gums the consistency is different... Things like pastry and light sponge don't really work... Keep expectations realistic for the outcomes.

Hi Gena,

I went grain free for several years. I used coconut flour, and made my own sunflower and pumpkin seed flours.
The only problem with coconut flour is that it contains a lot of fiber, and fiber is not our friend! 😊
I use coconut flour with seed or nut flours to cut down on the fiber.....but, nuts/seeds have fiber also, just not as much a coconut flour.

The most difficult part of coconut flour baking is that most recipes require many eggs, and I can't eat eggs either. There are only a few recipes that I use coconut flour for now.

If you can eat almonds than that flour is well incorporated into many recipes. We tend to do better with nut butters and nut flours and nut milks than just eating the nut, too.

Good luck!!

I can't eat eggs either, but there is an egg replacement called Energee egg replacement and it works like a charm and I did ok with it too.

I keep almond flour, brown rice flour, cornflour and potato flour as staples in my kitchen.

I mainly make flatbreads from my flours. All my efforts at baking have ended in disaster and very heavy stodgy baked goods that could not be eaten.

Hello. I use almond flour on occasion. I posted a pumpkin bread recipe made with almond flour in the recipes. It's very good and my family members who aren't gf really like it. I don't do well with the gf blends, either.
