tomorrow is the day!
Tomorrow, June 13 is the day I eliminate gluten and soy from my diet. Since I am blind and can't read labels, a friend and I made a trip to the grocery store just to read labels. I took notes in Braille. Then I went home and made my grocery list accordingly. I ordered a gluten free cookbook in Braille and it came this weekend while I was out of town. I took a look at some of the recipes this afternoon, and it looks like I will be buying quite a few new ingredients. I love to cook and I think that I will find foods I make from scratch more palatable than premade items. I am looking forward to feeling better. Iamb so glad I took the risk to take Jean up on her offer to help me get testing done. I am also looking forward to looking into the recipe section of this web site. Thanks for being here!
Bernice,
I definitely agree that the food you cook yourself will be safer, and fresher, and it will probably taste better than processed foods.
Good luck with your recovery program. If you need help with labels and ingredients, please feel free to ask here. We will be happy to look them up for you.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.

Tomorrow is the day.
Thanks, I am sure I will need more information. I also will be looking for more cookbooks and individual recipes.
Yay Bernice!!
You are very courageous, and just want you to know I am here for you too! Here's to feeling better and eating things that make us feel better in the long run ;-)
Cheers
