How much to eat depends on how much your stomach can hold. When I want to gain weight back, I eat until I am full, and then I eat some more. Just as overworking our muscles builds them up, overeating puts the pounds on. After our stomach stretches due to overeating, we are able to eat more, which allows us to gain weight faster.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.

Thanks, that makes sense. I tried doing that the other day so I know what you mean about that full feeling.
