Tex, how much protein should I eat?
I hope you have recovered well.
I'm concerned about eating too much protein that can evidently cause D. I weigh 107lbs.

The only risk from eating too much meat comes from eating only lean meat. You will eventually develop diarrhea (see the article at the link below). But this can be avoided by eating fatty meat (as described in the article). If you eat fatty meat, you can't eat too much of it as far as I'm aware.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.
I've read various articles that say I should only be eating 0.8 per lb of body weight and that generally women should only eat 46 grams a day. 56 for men. I've been eating around 80.
The articles say that it also causes dehydration and I have felt dehydrated recently even though drinking a good amount of water and no D. When I googled dehydration it led me to the articles on the side effects of too much protein.

That is the bare minimum, (46,54). 80 grams of protein, shouldn't cause any issues like that. I agree. I'm too old to eat much anymore, but I eat a lot more than that, and I'm not overweight. It looks like I get around a hundred grams of protein per day total, and I'm sure not a bodybuilder, but I do eat potatoes (with pork sausage) for my noon meal. Heck, if you eat a 16 oz steak, that's over 100 grams. I don't do that very often anymore, but whoever wrote those specs must have been a wimp. LOL. You sure can't do much manual labor on 56 grams of protein. You might be able to sit in an air-conditioned office all day though.

I felt very dehydrated despite drinking when my mag deficiency was going on. Until I started ReMag and adding 1/4 teaspoon of pink Himalayan salt per 1 Liter of water. That seemed to pull the water into my cells rather than peeing it all out. I think I just wasn't getting enough salt in my diet but there is something more to it though, I think putting the salt in your water ionizes it making it easier to absorb. I started salting my water before I started the mag and noticed I felt more hydrated almost immediately.....( there are around 72 trace minerals in sea salt that our bodies love) and I eat A LOT of meat. I don't count the grams and just let my appetite guide me.

The advice to only eat that very small amount of protein comes from Dr.Ron Rosedale(among others) and is very speculative, based on his understanding of the role of protein consumption in longevity and aging. Whether or not this is a reasonable approach for slowing down the aging process should not be the prime concern of anyone whose primary goal is to heal their bodies from the assault they have sustained from having developed MC. Longevity is of little or no consequence when you have a digestive tract that cannot process food adequately. Before thinking about longevity you have to think of what will make you better right now and for most of us the answer has proven to be adequate levels of protein for healing. I eat about 90 gms of protein a day.

Eating mostly protein (and extremely moderate amounts of rice and potatos) and eliminating supplements was the only thing that kicked me out of my last WD MC flare (no meds).
Now that I'm in remission I also eat overcooked veggies and a small amount of fruit.
Typical day--1-2 large chicken applebys sausage links with breakfast, lunch 3-4 GF meatballs, dinner piece of fish. I have some protein at every meal and let my appetite dictate amount.
Eating more protein is part of my bone density protocol. Google Creighton University/bone density/protein for the discussion.
Now that I'm in remission I also eat overcooked veggies and a small amount of fruit.

I've been eating two large shoulder blade lamb chops and three eggs plus 6 mini millet muffins I make with 1/2 c of millet flour per day. Keep trying to figure out how to expand my diet. My Enterolab results made me eliminate rice, corn, dairy and potatoes among other things.
In November my weight went down to 100 lbs (I'm 5.6) so I decided to eat Straus ice cream and gained 10 lbs in 2 months and digestion was much better, with mostly normans or some constipation, but after a high A1C blood test turns out my blood sugar shot up to prediabetes level so I had to stop.
Since I stopped eating the ice cream I have normans, but some days 3 with tummy discomfort. So frustrating.

Casein tends to be constipating for many of us. I can eat it with no noticeable digestive symptoms, but my immune system produces antibodies against it and it causes me to have osteoarthritis symptoms, so I avoid it.
Protein makes muscle, carbs make fat. But it's much easier to gain weight by adding fat, than muscle. To gain weight eating protein requires eating a lot of protein, and it probably requires some exercise (because it amounts to bodybuilding). By contrast, to gain weight eating carbs (grains especially) all one has to do is to eat and take it easy while the fat forms.
