Grateful to have found you all. Best Christmas gift was finding all of you. Aside from all the wonderful help I’ve received on how to eat differently and take care of myself, the gift of knowing I’m not alone and your support is immeasurable.

Merry Christmas 🎄 an Happy New Year’s to each an everyone 😁

2nd year of healing and I had the best Christmas including a dinner that I had to bring my own steamed carrots to (they had potato and ham)...but hey I ate well and no reactions!

I also made safe sugar Christmas cookies and boy did that make for a treat this year. Have to say all the hard work has finally paid off💕

Erica,

Your Christmas celebration sounds wonderful! On Christmas Day, it was just our immediate family - I usually make a turkey breast and, in the past, would use butter when making it. A co-worker suggested putting a few pieces of bacon on top to help create some drippings for gravy and to keep the turkey moist - it was yummy and I got to enjoy it too!

Would you mind sharing your safe sugar cookie recipe? I love to bake and look forward to being able to have a safe cookie now and again. I noticed that you also have sensitivity to eggs - do you use quail eggs when you bake?

Thank-you so much! I'm doing well most of the time and am inspired by the progress you and others have made further along in this MC journey.

Pam, re: quail eggs for baking....yes! I use them for everything that I used to use chicken eggs for. They are perfect, but expensive. But I really think they are worth the extra cost. They are also very healthy and full of protein. Use 4 to 5 for every one chicken egg. You'll have to play around with your recipes. For instance, I use 6 for cornbread.

Didn't mean to jump in on Erica's question, but I'm passionate about quail eggs! 😋

Hi Pam :-)

I have been using Duck Eggs I'm sure quail works just as great too :-) ....and the recipe only calls for 2 in a single batch that makes 36 cookies. I also used Melt (and Earthbalance can be used too) instead of butter, and almond milk in place of any cow milk that was called for but coconut and cashew milk can be used also. I used Bob Mills gluten free flour mix blend and it works like a charm.

The icing is powdered sugar, Melt, and almond milk and vanilla flavoring.

Ironically I'm using a recipe out of the The Joy of Cooking cookbook and substituting ingredients one for one with no altering in amounts. Here is a picture of the recipe and product afterwards.

I have enjoyed these cookies for about 5 days now with no reactions....so it is important to substitute your safe ingredients in order for this recipe to work for you ;-) Plus I have had to heal my gut for a good 2.5 years now.

Thank you so much, Erica! I’m excited to try them. It makes me happy to know that making homemade treats, to have in moderation, is not out of the question. I tried to find duck eggs in Massachusetts and didn’t have much luck.

Laura ~ I’ve noticed a local grocery store (Market Basket for any other Massachusetts members who might be interested) has quail eggs. Getting in and out of that store over the holidays is a nightmare but I plan on giving it a try after New Year’s.
