I am struggling to find recipes that will not incorporate gluten, dairy, soy and nuts. Is it possible?

You might try searching the internet for AIP recipes. AIP is the Paleo Autoimmune Protocol, and it excludes all of those things (and a few more) in its initial elimination phase.

Pretty much anything with rice :) I have some recipes in Dee's kitchen for burgers. I enjoy steaks (fish, beef, turkey, chicken, lamb, pork) with vegetables (mostly sweet potato, carrot, zucchini and pumpkin). Salads have always been a favourite of mine but I've had too cut them out of my diet. I still try salad like dishes every now and then. For example black rice, tuna, peas or beans (if you can eat them), capsicum (if you can eat it), spring onion (if you can eat it), mint leaves, coriander leaves. Dress it with some sushi seasoning of apple cider vinegar, olive oil, salt and pepper.

Another alternative is a roast sweet potato (or pumpkin) salad, mixed with avocado, baby spinach (leave it out if your early in your eating plan), spring onion, basil leaves and a dressing. My suggested dressing - place 2 tbsp. of vinegar (apple cider) in a bowl with 4 tbsp. olive oil, a pinh of salt and pepper, and 1 tbsp. maple syrup. Whisk it together and pour of the combined salad.

If you are able to, dried sultanas or dried cranberries can be added to give a nice lift/variation to most salads.

Like all of us you have to tailor everything to those foods you know your body likes :grin:
