King Arthur GF pancake mix
Hey guys. Haven't been on for a while, but I hope those of you who know me,are better today than when I first joined... and that the newbies find the answers here that you need to start healing yourselves. It can be done with diligence!
So, what is up with king Arther pancake mix these days? It use to be the best.....light, airy and cake like. They changed the box and the product IS NOWHERE AS GOOD as it use to be. Is there another brand I should try?

Hi Leah,
I never did catch onto the King Arthur brand....I did discover the Bob Mills 1 to1 flour (it comes in a much bigger bag like 5# kind) has been great to work with if you want to create a pancake mix (or anything else in general)....

Another brand that has been good for me that is a premix pancake mix is Bisquick Gluten free, I an find this practically anywhere....

It does have buttermilk.
Brown rice flour, white rice flour, cultured buttermilk, natural almond meal (may appear as brown flecks), tapioca starch, sweet rice flour, potato starch, grainless and aluminum free baking powder (sodium bicarbonate, sodium acid pyrophosphate, potato starch), baking soda, sea salt, xanthan gum.

You must have just received a bad batch. I have boxes going back to an expiration date of 7/21/16, and some newer ones, and the ingredient lists are identical to the new one (on all the boxes) with the replacement of the word "Leavener" with the words "Baking Powder" (but the ingredients in the leavener/baking powder are also identical). There are changes in the rest of the label, but not in the ingredient list.

Hi Tex! How are you doing these days? So, are the boxes you have white ( the old ones) or blue ( the new ones)? The stores here only carry the blue boxes. I swear they are different. Noe awful, but not fluffy like cake like they were before. Maybe they are using a different supplier for the flours or something. I just don't know...

I'm doing fine and I feel great. I trust that you're still doing well, too.
I keep my pancake mix in a deep freeze so boxes occasionally get lost behind other things. I found a box with an expiration date of 07/21/16 and one with an expiration date of 09/08/16. Those are both white boxes with blue trim. I also found a box dated 12/06/17. It's a blue box, similar to the current boxes. But the ingredient list on the three boxes are identical, and other than the "leavener to baking soda" name change I mentioned in my last post, the ingredient list is the same as the current boxes. The change from "leavener" to "baking soda" was made sometime before the 12/06/17 expiration date box was made because it appears on the box dated to expire in 12/06/17. So that change was probably made sometime in 2015 or early 2016.
I've noticed this: if I use a relatively watery brand of almond milk or I dilute the almond milk with some water, I get much thinner pancakes than I get if I use straight Silk Vanilla Almond Milk (undiluted). As you say, they're cake-like and a half-inch thick or better when I get it right.
