Thoughts?
My latest reaction to being glutened is insomnia. Last evening we ate at Houlihan's which is normally good with my food requirements. The server went to talk to the chef after I ordered and came bake to say that he would bake my salmon rather than grill it due to cross contamination. I wanted to kiss her! But as I was still awake at 2:00 a.m. I was trying to figure out what caused it. I had salmon, a plain baked potato and steamed broccoli. I rarely drink wine but after an awful week at work I decided to have a glass of wine that I googled ahead of time and it is gf. Any thoughts of what caused the insomnia? I forgot to take the GlutenEase along, lesson learned there. I can't remember if the potato was cut, that's the only thing I can think of.

This may be irrelevant, but I once got glutened by a cook (or maybe it was the server) who (without thinking) sliced my baked potato with a knife previously used to spread butter on "Texas Toast". The diarrhea began about 3 hours later.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.
Thanks, Tex. That's the only thing I can think of, too. I was going to tell the server that they shouldn't cut the potato....I will the next time!
