Fried Rice

Paul here, in trying to find palatable dishes to serve my CC wife, Charlene, my niece sent me this one. If you tolerate the ingredients, it's quite good. Of course, you can leave out what you must and add in what you can!

FRIED RICE
INGREDIENTS:
White Rice, cooked and chilled (I use left over rice from the night before)
Coconut or Extra Virgin Olive oil
Garlic (minced)
Ginger Root (minced)
Lemon Grass
Shrimp, (or left over Pork, Chicken, Steak, etc)
one or two eggs
Salt to taste

DIRECTIONS:
Put some of the Coconut or Olive oil in large skillet. When oil is heated add minced garlic and ginger root. Sauté till golden. Cut stalk of lemon grass in quarters and smash it pretty good with a rolling pin to release flavor and add to skillet. If using uncooked shrimp, add it now and cook until almost done. Add rice (if using precooked shrimp, add them now) and when hot, make a well in the center of the rice. Scramble the egg(s) and put into the rice well. When eggs are almost done, mix everything up good and finish the eggs. Remove Lemon grass stalks before serving. The Lemongrass gives a nice citrus flavor without the acid.
